This is going to be quick ~ the little one is cutting more molars I think… fever, sick, whiny, all that great stuff & I have a laundry list of stuff that I need to do before my sister arrives tomorrow night… including laundry and we found out the septic tank was starting to come unplugged so that explains the other issues we were having… and I feel like my hands are so full and I only have one youngin’, LOL! ~ and even though it is late, I still wanted to get the Menu Plan posted.  BTW, there is a possibility the new site could go live as early as this coming weekend!!

MONDAY: Spaghetti

TUESDAY: Grilled cheese sandwiches & soup

WEDNESDAY: Shredded BBQ Chicken Sandwiches

THURSDAY: My nephew flies in from England after being gone 2 years, so we’ll probably just grab something on the way to the airport…

FRIDAY: Undecided but probably something pretty simple, like breakfast for dinner, leftover BBQ Chicken, grilled cheese & soup, etc.

SATURDAY: Nephew’s Welcome Home Party, so will probably make the finger foods “dinner”, LOL!

SUNDAY: Another nephew is having a big family birthday party and guess what is on the menu?  More spaghetti!

Tuesday (13th) : Baked chicken coated w/ butter and Italian Mozzarella seasoning w/ tator tots & veggies

 

Wednesday (14th): Spaghetti

 

Thursday (15th): Sunday Roast Chicken

 

Friday (16th): Beefy Mac or Hamburger Helper (whichever “box” I grab, LOL, either way it’s noodles of some sort with ground beef).

INGREDIENTS

3 tablespoons flour

1 egg

1 tablespoon water

8 tablespoons HG Italian Mozzarella Meatloaf Pantry Staple

12 sticks string cheese*, unwrapped, cut into quarters, lengthwise

2 cups vegetable/canola oil

 

Optional: 1 cup HG Homestyle Spaghetti Sauce, prepared (or other dipping sauce)

 

DIRECTIONS:

 

1.       Pour flour into a zip top bag, set aside.  In a small bowl, beat egg & water, pour into a separate zip top bag, set aside.  Pour meatloaf seasoning into a third zip top bag, set aside.  Coat cheese pieces, several at a time, in flour, then in egg mixture, then coat in meatloaf seasoning, shaking well, each time, to coat.

 

2.      Cover and chill for at least 30 minutes in the freezer or at least 4 hours in the refrigerator.

 

3.      Heat oil to medium high in large skillet.  Place cheese sticks in hot oil and cook for about 10 seconds on each side, or until lightly browned.  Remove to paper towels to stand for 3-5 minutes before serving.

 

4.      Use optional spaghetti sauce for dipping, if desired.

 

 

Serves 12.

 

* May substitute block mozzarella cheese, cut into 4” by 1/2″ sticks.

INGREDIENTS

2 pounds potatoes

1 stick butter / margarine, melted

12 tablespoons HG Italian Mozzarella Meatloaf Pantry Staple

 

DIRECTIONS:

 

1.       Preheat oven to 400 degrees.  Cut unpeeled potatoes into wedges.  Put potatoes and butter into 1-gallon zip top bag; shake to coat.  Add meatloaf seasoning to bag; shake to coat.

 

2.      Place potatoes in greased 13x9x2 baking dish.  Bake for 30 minutes or until potatoes are fork tender.

 

3.      Serve immediately.

 

 

Serves 6.

Confession time:  I have YET to follow my menu plan!!  A few days I might, but I guess that’s better than nothing.  I am getting a little more comfortable making the menu plan, going by what is already in the house mostly and buying just the couple of things I don’t have on hand I may need for it.  Now, I just need to make a point each morning to “prepare” dinner for the evening, to make sure everything will run smoothly that evening.  So, if it looks like we are eating the exact same thing every week – it’s probably just me trying to actually HAVE that meal, not repeating it!  Sometimes we’ll do a repeat though.  Once this is really working for me, I want to do a menu plan for several weeks and rotate through them, adding a new menu week in now and then.  I’m not there yet, but I think when I do get there that will be one more thing that will help the home run smoother.  It looks like the only thing I need to buy specifically for this week’s dinners will be cheeses – everything else I have on hand.

 

Monday: Sunday Roast Chicken with Oven Fried Potatoes, green beans, and corn

 

Tuesday: We’ll probably eat while we are out and about OR Creamy Lemon Chicken if we are home.

 

Wednesday: Birds Eye Voila

 

Thursday: Chicken & Pasta w/ GG box veggies

 

Friday:  Hamburger Helper OR Parmigiana Chicken (taking the easy road if hubby is working)

 

Saturday: Lasagna & Mozzarella Sticks

 

Sunday: Roast Flav Rice Casserole (haven’t decided sides yet)

Menu Plan Monday

I’m not feeling too inventive this week, so the menu is what it is. 

    

Monday: Creamy Lemon Chicken

Tuesday: Beef-n-Rice

Wednesday: Take out (Chinese for me!)

Thursday: Frozen Pizza

Friday: Mac-n-cheese (will figure out the meat later – maybe ham?)

Saturday: Sunday Roast Chicken (using Homemade Gourmet seasoning – yummy!!)

Sunday: Breakfast for dinner
